S'mores Truffles and Winners!

I made Rice Krispie treats two weeks ago because the husband felt like eating them, and well, I'm not adverse to having a quick little treat to snack on.  When I bought the box of rice krispies, I also tossed in a box of my all-time favorite cereal, Golden Grahams.  I rarely eat cereal, but I've been on an almond milk craze for two months, and I thought a bowl of golden grahams and vanilla-almond milk would be a nice little treat.  Anyway, while making the rice krispie treats, the cereal truffles popped into my head.  At that point, I rolled a few of the rice krispie treats into balls, melted two squares of semi-sweet chocolate, and dipped them.  They were awesome!  Then, I remembered the Golden Grahams and the idea of the s'more truffle was born!  Rather than just melting squares of chocolate, I chose to use the chocolate mixture that I use for these.  I brought the S'more Truffles to work Thursday, and everyone said they were addictive.  I'm already thinking of other cereals, I think fruity pebbles truffles would be a great addition to the Easter dessert tray!
 
S'mores Truffles Printable recipe
  • 6 cups Golden Grahams cereal
  • 1 10.5-oz bag mini-marshmallows
  • 1/4 cup unsalted butter
  • 1/4 teaspoon vanilla
  • 18 oz chocolate bark squares, coarsely chopped
  • 6 oz semi-sweet chocolate morsels
  • 2 oz bittersweet chocolate squares, chopped
  • 1 1/2 teaspoons shortening
  • 1/2 teaspoon vanilla
In a large saucepan, melt butter and marshmallows together; stir in vanilla.
Turn off heat and add cereal; stir to coat.
Turn out mixture onto parchment paper and allow to cool for 15 minutes.
Using your hands, form mixture into small balls and place on additional parchment or wax paper.
Once all balls have been formed, combine chocolate bark squares, morsels, bittersweet squares, and shortening and melt using a double boiler or microwave. 
Once chocolate is melted, stir in 1/2 teaspoon of vanilla.
Working quickly, coat all cereal balls with melted chocolate and place on parchment or wax paper to dry.

  4. This is so timely! I made naturally sweetened marshmallows this week and I have been experimenting with different marshmallow recipes. I bet I can use my gluten free graham crackers to make these. My kids would love it!

  6. Your use of Golden Grahams cereal brought back such good memories of my Grandma. She would always have those in the house and we would devour the whole box. I haven't had them in years but this recipe has me craving a box just to make these treats.
