Cheesey Sausage & Broccoli Quiche

Somehow, I missed a breakfast post last week, many apologies for that, especially if you were looking forward to one.  So, I hope today's recipe makes up for last week's mistake.  Another crustless quiche, similar to my Mediterranean version, but using different sausage and adding broccoli.  A few years ago, I made my version of a John Wayne breakfast casserole for a morning meeting, and it was a bit success, and I almost made that today, but there were 2 heads of broccoli in my fridge taking up way too much space, and the rest is history. 
I've had many breakfast casseroles with broccoli, and I've noticed that the broccoli doesn't seem to contribute much to the flavor of the dish.  My goal with this casserole was to up the ante, so to speak.  So, I sauteed the broccoli with garlic before adding it to the casserole, and while it's not as intensely noticeable as the sausage, the flavor was enhanced.  If you want a heartier dish, add cubes of toasted bread or hash browns to the mix.

Cheesey Sausage & Broccoli Quiche Printable recipe
9 large eggs
1 lb spicy pork sausage
2 large stalks broccoli, trimmed and chopped
1 large onion, diced
1 tablespoon garlic, minced
1/4 cup green onions, sliced
2 cups cheddar cheese, grated
1/2 cup pepper jack cheese, grated
1 cup whipping cream
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons extra virgin olive oil
1 tablespoon unsalted butter

If baking immediately, preheat oven to 350 degrees; if not, refrigerate and preheat oven when ready to bake.
Heat olive oil in a large skillet, then add broccoli florets; cook until broccoli is crisp tender.
Remove broccoli to prepared casserole dish.
Add the 2 tablespoons of butter to the same skillet, and saute diced onion and green onion until tender; remove and layer onto broccoli.
Cook sausage in same skillet until brown and cooked through; layer onto onion mixture.
Allow mixture to cool before layering on shredded cheeses.
Whip eggs with heany cream, salt, & pepper.
Cover with foil and either bake immediately or refrigerate**
Bake at 350 degrees for 35-40 minutes or until set. 
**If casserole has been chilled, add additional time for baking.

  1. Louanne, I would eat this for supper (as well as breakfast....or lunch)! It's hearty enough with the sausage and broccoli and cheese to make a great supper. I love there's no crust, I don't like crust with my quiche. Just give me the good stuff, lol. Looks seriously delicious!!

  2. I like the fact that you don't use crust, it makes it so much easier. Broccoli is a favorite vegetable.
